The Process

After the usable portions of the fish are removed for human consumption, the remaining part of the fish body like guts, cartilage, scales, meat, etc., are put into water and grounded up.

Protein hydrolysates from fish processing discards can be prepared using four different processes namely acid process, alkali process, enzymatic process and microbial fermentation.
